Raspberry & White Chocolate Macaroons

Makes-50

FOR THE GANACHE
75 g white chocolate
15 g butter
75 ml double cream

FOR THE MACAROONS
275 g icing sugar
120 g ground almonds
6 g powdered egg white
3 egg whites
1/2 tsp pink food coloring
3 tbsp seedless raspberry jam


TO PREPARE THE GANACHE
1. melt the white chocolate and butter together in a microwave or in a bowl set over simmering water. cool.
2. lightly whip the double cream and fold in. cover and set aside

TO PROCEED
1. line two baking sheets with non stick baking parchment. heat the oven to 160 degree c
2. sieve the icing sugar and almonds into a bowl.
3. use a food processor to re- grind any almond left in the sieve to a fine powder and add to the rest.
4. whisk the powered egg white and egg whites together to form stiff peaks. add the food colouring a tiny amount at a time and whisk.
5. fold the almond mixture in the volume will decrease massively. transfer to a piping bag oa a plastic food bag with the corner snipped off and pipe rounds of the mixture onto the baking sheets, 5cm in diameter.
6. bake for about 12-15 minutes, untill risen with a frilly base but not coloured.
7. watch them and if they start to turn golden, reduce the oven temperature.
8. carefully loosen each macaroon. if they stick to the baking sheets, pour a little water under the baking parchment, being careful not to wet the macaroons and leave for a minute to steam them off from underneath. cool.
9. spread a macaroon with a little ganache and another with raspberry jam.
10. sandwich together and leave for 15 minutes for the filling to soften the macaroons slightly and serve. filled macaroons will keep in an air tight container for up to 12 hour in the refrigerator.

YUMMY!!!

Leeza, this recipe sounds so delicious. I will start by mixing those ingredidients :arrow:
white chocolate
butter
double cream

in a bowl and sticking my head in with a short straw. :lol:

Just kidding, I will try this recipe one day and let you know how I got on. :)
