Chocolate fillings

Postby gardenlaw » Thu Jul 28, 2011 8:42 am

I can now successfully make chocolates in a mould that look like proper chocolates. I use excellent rigid moulds from Vantage House which I buy secondhand. I tried silicon moulds but they are only good for baking. Now I am looking for help with the fillings. Has anyone a good fondant recipe that remains soft enough to pipe into the chocolate shell?

I once made a yummy filling with nutella, icing sugar and butter. I don't have a recipe, I tend to throw things in a bowl until the consistency is right and then I either get things deliciously wrong or deliciously right.
But nutella makes such a nice cream filling or cake frosting, better than melted chocolate, but that's just my opinion.

Love the Nutella idea, Will. Must try it and report back. World Nutella Day! Never knew there were so many recipes using Nutella.
