When in the supermarket today I saw a vegetable that from a distance looked like celery but is called cardo, which according to my Spanish dictionary means thistle. Anyone ever cooked thistle stalks?

That's the one! Now I see the word "cardoon" I remember it! Never tried it. May do next year when it's back in the shops.

Had it in Córdoba in almond sauce. It needed the almond sauce!

I have just notice this thread has over 4000 hits with only six posts and one of them yesterday. Clearly people must have been intrigued by "thistle" turning up in the cookery forum.
