Zucchini Lasagne

Zucchini Lasagne

1kg zucchini, cut length wise into .5 cm thick strips
salt and pepper to taste
100g flour
500ml vegetable oil
400g fresh tomatoes
200g mozzarella cheese
200g parmesan cheese
20g fresh basil
20ml olive oil

1. Roll the zucchini strips in the seasoned flour and then deep fry in the vegetable oil until golden brown in colour.
2. Drain the zucchini and let it sit on absorbent paper for any excess oil.
3. Wash and slice the tomatoes, grate the mozzarella and parmesan cheese
4. In an oven proof tray, build your lasagne, by layering the zucchini,fresh tomato, fresh basil and then the cheese.Repeat for several layers, finishing with a layer of cheese.
5. Bake in the oven for 15 mins at 160 degree c.
6. Serve with a drizzle of olive oil

Well I am trying to put a little weight on so should try all your lovely recipes several times over! :lol:

lol.... tired of dieting thats why started eating some mouth watering dishes...
hope you both too enjoyed it. have many such recipes in hand will share all those.
